    I love cooking with mushrooms and onions because they make their own juices, so you very rarely need to use oil for them! We don't totally avoid oil in our house, but we do try to limit it only for when we really need it. If we are going to use an oil it is usually olive, coconut, or avocado oil. We do occasionally use things like grapeseed oil or sesame oil for certain recipes. Anyways, I never add oil "just because." So this is one of those times where any oil in the recipe

    Whenever I say I'm making salad for dinner, I get "the look" from Jordan.     This salad is SO green, SO simple, and SO delicous!     This is one of those recipes for when you're in the mood for "restaurant food". As I've mentioned in earlier posts, we keep our consumption of processed products limited (for us that usually means 1 meal per week with vegan "meat") because even though they're plant-based, they're still processed, so you aren't getting the maximum nutrition from them.     Don't get me wrong, I love lasagna with real noodles but sometimes I want something a little healthier and that's why I came up with this simple zucchini lasagna.
